30ml Beefeater London Dry Gin

20ml Kamm and Sons

20ml Pierre Ferrand Dry Curacao

20ml lime juice

7.5ml homemade rhubarb syrup (see below)

15ml egg white

For the rhubarb syrup

Cut up and boil two or three stalks of rhubarb in a pain, with 2 cups of sugar and 1 cup of water. After cooking leave to cool down with rhubarb still in it, then fine strain.

To make the cocktail

Pour all the ingredients into a shaker. Dry shake, then shake very hard with ice and fine strain into a cocktail glass.

Garnish with Angostura Bitters and a strip of orange zest.
